Easy Mint Shrimp Patties with Chilli Dipping Sauce

Wow your guests with this super simple 5-ingredient Thai-inspired appetitizer at your next party!

ingredients:

6 oz Shrimp (Peeled)

½ Tsp Salt

¼ Tsp White Pepper

2 Tbsp Chopped Mint

2 or 3 Tbsp Vegetable Oil (for Pan Fry)

Chili Dipping Sauce:

2 Tbsp Hot water

1 inch Jalapeno (chopped)

1 Tbsp Shallot( thin sliced)

2 Tsp Rice Vinegar

3 Tsp Sugar

½ Tsp Salt

1. Make the Dipping Sauce: add the sugar, vinegar and salt to hot water and stir until the sugar dissolves. Add the remaining ingredients. Set aside.

2. Coarsely chop the shrimp. You want the shrimp to hold together so do not chop it too fine.

3. In a bowl, mix chopped shrimp with salt, white pepper, and mint together, then take the mixture from the bowl, then throw it back to the bowl, repeat this beating motion for 3 or 4 more times until the mixture sticks together. Shape the shrimp mixture into a small patty, set aside.

4. Heat the oil to coat the bottom of the non-stick pan over medium-high heat, place the shrimp patty in the pan, fry until golden, 2- 3 mins each side. Serve with dipping sauce.
